Pizza Soup

1/2 c. onion
1 t. oil
2 c. water
15 oz. pizza sauce
1 c. pepperoni
1 c. tomatoes
8 oz. Italian sausage
1/4 t. Italian seasoning
1/4 c. parmesan cheese
shredded mozzarella
any other pizza topping you like

Saute onion and any vegetables in oil. Add remaining ingredients except cheeses. Simmer 20 minutes. Stir in parmesan cheese just before serving. Sprinkle each bowl with mozzarella. Great with bread sticks.

Macaroni

1/4 c. chopped onion
1 T. butter
1 T. flour
pinch of pepper
1 1/4 c. milk
8 oz. Velveeta cheese (grated or shredded)
2 tomatoes, sliced (optional)
2 c. uncooked elbow macaroni

Cook macaroni according to package directions. Cook onion in butter until tender and clear. Stir in flour, pepper and milk. Stir until slightly thickens. Add cheese and stir until completely melted. Mix macaroni and sauce together and pour in 9x9 dish. Bake at 350 for 25-30 minutes. Sprinkle tomatoes on top and bake for a little longer.

Pasta with Zucchini, parsley & feta

6 oz. uncooked rotini
2 t. olive oil
3 zucchini, cut in 1/2 inch pieces
1/4 t. salt
1/2 c. crumbled feta cheese
1/4 c. finely chopped parsley
2 t. lemon juice
1/2 t. salt
1/4 t. pepper

Cook rotini and drain reserving 1/4 c. liquid. Coat skillet with cooking spray. Add oil and place over med-high heat. Add zucchini, saute 13 minutes, sprinkle with 1/4 t. salt. Combine hot pasta, reserved liquid, zucchini, feta and remaining ingredients in large bowl. Toss and serve.

Mexican Manicotti

1 lb. ground beef
1 (16oz) can refried beans
2 1/2 t. chili powder
1 (8oz) pkg. manicotti shells
2 1/2 c. water
1 (16oz) jar salsa
2 c. sour cream
1 c. shredded monterey jack cheese
1/4 c. sliced green onions

In a bowl combine uncooked beef, beans and chili powder. Spoon into uncooked shells. Arrange in greased 9x13 pan. Combine water and salsa and pour over shells. Cover and refrigerate overnight. Remove from fridge 30 minutes before baking. Covered with foil, bake at 350 for 1 hour. Uncover; spoon sour cream over top, sprinkle with cheese and onion. Bake 5-10 minutes longer, or until cheese is melted.

Baked Penne Casserole

8 oz. Penne pasta
1/2 lb ground beef
26 oz. pasta sauce
2 c. mozzarella cheese
parsley, dried or fresh

Save 1 cup cheese and the parsley. Mix everything else and put in greased 9x9 dish. Cover with foil and bake at 350 for 30-35 minutes. Remove foil, add remaining cheese and parsley and bake 5-8 min or until cheese is melted. Can easily be doubled.
